Classical music pipes over an antique stereo system as Kakinuma prepares his pizzas, each of which spends just 60 seconds in the oven. The margherita is a long way from textbook: only a slight smear of tomato sauce under the cheese, which is topped with vividly ripe tomatoes, basil and a hearty lashing of olive oil. The crust is as light and chewy as freshly baked ciabatta, with a dusting of salt that makes each bite worth savouring. Kakinuma's marinara is just as good, packing the kind of vibrant flavour that more extravagantly topped pizzas seldom achieve. Shibuya Cheese Stand, which located at just a short stroll from the heart of one of Tokyo’s busiest shopping districts. Run by a team of young cheese-makers, it currently offers only two kinds, a creamy mozzarella type and a ricotta. Besides being available in packages (¥550 for 100 grams for the mozzarella; ¥470 for the ricotta), both cheeses are also being made into a range of very tasty sandwiches. Whether mozzarella with tomato or vegetables (¥480 each); ricotta and salami (¥520); or mozzarella and egg with a drizzle of truffle oil (¥560), all are served in long rye-bread rolls, and can be either eaten in the small cafe area — perhaps with a glass of whey drink on the side — or taken out. The most slick of these operations is undoubtedly Antenna Wired Cafe, not least because it’s a solid, properly built structure with a large café area and internet access for hot-deskers. Outside you’ll find plenty of other options, including a place selling fancy potato fries, a fish shack called Fish Coop, vegan food stand Cori, and Dote Cafe, a stall selling vegan dishes with a Hawaiian bent. You can find a seat under one of the plastic geodesic domes or inside the huge festival tent area if the weather’s inclement. Take note that many of the food stalls start shutting down mid-evening if they feel like it; McDonald’s this ain’t.
