The best (and only) Mexican restaurant in town! Great prices, excellent chips and salsa, and fantastic flan! It is a cute little place, with fun furniture and excellent ownership and consistent staff and service. The only thing they are missing is an alcohol license, meaning no margaritas or Dos Equis. They do however, have Mexican Coke in the big bottles so get that instead.

Surprisingly good Chinese food, for being in a small Midwest town! Ambience?.....no. Customer service?....not really. Excellent to-go Chinese? Definitely! Get the Chinese donuts with your order. You won't regret it! This is one of our kids' favorite place to eat in town.

Though the Renaissance Cafe is not right in LIndsborg, it's only 10 minutes north in Assaria and is the finest restaurant in the four county region of McPherson, Saline, Rice, and Dickinson Counties. If you want to take your loved one out for a "nice" dinner, go here. It's located in the former Assaria school building, which is surprisingly quaint and romantic in it's decor and service. You won't regret it! May be too "fancy" for kids though.

This coffee shop on the south side of Main Street is under new ownership. The ambiance is excellent and it's a good spot if you just need a quiet, private place to hang out with a cup of tea, hot chocolate, or coffee. They are open on Sundays, and few places in town are, so this is a great option then.

Drinks & Nightlife

Voted one of the "Best College Bars" in the U.S. by Good Morning America, the Ol Stuga is a local icon. Bethany students identify this bar as a defining memory from their college experience for decades after leaving school. The most noteworthy offering here isn't actually a drink, ambiance, or anything you'd expect. It's a sandwich that has achieved legendary status in certain circles. The "Brent Nelson" is it's name. This is the closest thing we have to "Cheers" in these parts.

Coronado Heights is a "must see" destination while you are staying here in Lindsborg. Voted as Kansas favorite mountain by Backpacker Magazine, this large hill just northwest of town offers great hiking, picnicking and wonderful views of the entire Smoky Valley! You can drive to the top, climb the stairs to the top of the castle (Built as a WPA project in the 1930's) that honors the Spanish explorer Francisco Coronado who surveyed this very area looking for the Lost Cities of Cibola before giving up and heading back to Spain.

This is a bit of a drive, but very cool nonetheless. You can hike in here to see these "caves" cut out of the limestone bluffs over 100 years ago. If you plan to go hiking at Lake Kanopolis and the Mushroom rocks, put this one in your daytrip plans as well. It's definitely off the beaten path and not seen by many people.
