The domain is in the middle of the Rhône valley. They harvest their olives from mid-October, to lose as few olives as possible. Suddenly their yield is lower (6 to 7 kilos of olives per liter) but they obtain an olive oil with this characteristic green fruitiness, and a pleasant balance between taste, ardor and bitterness.
