As soon as we arrive we we will start a pleasant walk in our hazel tree plantation, where we will explain all the phases of the work. From pruning, fertilization and lastly the most important phase: the hazelnut harvest. We will then proceed in the farm where we will guide you from the first phase of cleaning, to the drying and storage. We will pass then to the transformation experience: in our laboratory ,where all processing and transformation phases can be observed live! You will discover how we obtain the finished product. Starting from the personal and manual selection, where the “bad” hazelnuts are eliminated. Afterwards the roasting takes place! The hazelnut smell here is so intense you will love it Once toasted we will select only the best for the vacuum packs. The others we will use to make other processes such as the preparation of the grain and the hazelnut flour useful in pastry. Another very important process is the preparation of the hazelnut paste, very useful for ice cream or for the preparation of hazelnut ice cream. We will illustrate how to obtain the hazelnut cream made with only 3 ingredients (65% hazelnuts, sugar, lean cocoa powder) And finally, how to make hazelnut oil with the cold pressing of toasted hazelnuts. Ciao from Massimo! Born and bread in Alba I love my region and my countryland and hazels! After my high school, I startedi to work in several offices but I never forgot my first love! In the meantime I studied everything about the hazel production and I after some years I start to take care the hazel tree plantation owned by my family. Myy passion is my job and it's nice to see the transformation of this incredible fruit, from the harvest to the delicious product used in hazel creams to give that special taste everybody of us know so well!
