We start off with getting to know the local variety of our ingredients and vegetables, explaining their origin, use and nutritional values. After that, we introduce ourselves to the typical Peruvian kitchen, their specialties, customs and history-noting as well the recent excess of meat consumption in nearly all dishes, discussing vegetarian options and variations. After having chosen the dish we are going to prepare together, we start chopping, peeling and cooking, while updating us with nutritional information and healthy ways of preparation. Next to the main dish, we also are going to prepare a vegetable salad and drink typically served in Peru. After having finished cooking we set the table and eat all together with the family. In the end every participant receives a little recipe collections, with my most popular recipients and secretes, to take home with him. For whom is interested, at last we can give a little tour around our ecologic project side, right next to the house, where after finished construction, we will open there a cultural center for healthy lifestyle and food.
I am a 72 year old grandfather from Peru, 30 years back I decided to dedicate my life to cooking traditional food in a vegetarian version. I participate in different workshops and schools over all this years, focused on vegetarian cooking. I have traveled several areas of Peru to get to know the specialties from mountain and jungle regions. Meanwhile I cook daily for all visitors/voluntaries from our Eco-project, I have exchanged knowledge and recipes with many people from all over the world, this experience helped me to refine my cooking skills with the years. During the workshop, my daughter-in-law Lucie Wagner will support me with her language skills (English, German) and her cooking skills which she has gained through the uncountable times she assisted me in our daily cooking.
We are going to cooking our own vegetarian traditional Peruvian lunch.
The lunch is served with a typical drink, either Chicha Morada o a fresh fruit juice which we prepare together.

The cooking class will take place in our house "Casa Conciente", which is one part of our ecological project - we have restored this old house with a lot of love from recycled materials and you will find beautiful techniques of ceramic mosaics everywhere in the house. The house is 30 min from the center by pubic transport, in a green suburban area from where you can take beautiful walks.
