This experience is as much about history as it is about food. The objectives are that each guest will leave feeling: Excited, informed, and loving Mexico even more! We will begin our journey with an introduction to what pre-hispanic life was like, around the times of the first interactions between the Mayan's and the Aztecs. For example, a very important trait of all food at the time was the perfect aroma and flavor... it was believed that the God's would not accept your offerings of foods to them if these two traits were not right. Next, we will explore the tools and implements, and also explain what each are used for, and allow the guests to get involved by using first the "molcajete" and "metate" to make two types of salsas by hand. Next, guests will learn to make two types of tortillas, white and blue, by hand. Mole and camote are next, and we will be making enchiladas de mole. For our salad, we will be creating either a "ensalada de nopal" or guacamole, depending on the ingredients available on that day. We will then be teaching the guests how to two types of "agua del dia", or fruit water. All recipes from traditional ingredients.

I am a Mexican woman who is proud of my heritage, and in love with the nature, the colors, folklore, flavors, and smells of Mexico. I am proud to be of indigenous heritage, and even more proud to be from a line of artisanal, authentic pre-hispanic chefs. I was taught from an early age, not only how to cook and prepare the food, but also that food and water are life, and that we must respect both greatly. I own a organic produce delivery business, and enjoy teaching the background of each fruit and vegetable, and how they were both used as medicine and food in ancient Mexico. I am trained in the use of ancient cooking tools and utensils, and intend to share those with my guests in this experience as well. I am excited to share my authentic, pre-hispanic cooking knowledge with guests from all over the world!
