프로그램

Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house.
Narrations and explanations on the history and traditions of Salento will accompany the culinary experience.

When I went to visit my grandmother in Ostuni as a child, she would always say to my grandfather "pre' pre', facim do stacciodd p' la piccenna’’, ‘’come on, come on, let’s make orecchiette for the kid’’. And immediately the board, the semolina in the big cotton bags and the lukewarm water in the kettle that I still keep, appeared. My task was to place the orecchiette magically created by my grandmother's hands, under the watchful eye of my grandfather. Now that these beloved people are no longer with us, the wise hands of my aunt have taught my daughters and I the noble art of preparing orecchiette at home, so that family, traditions, affections, memories, smells, tastes, rituals don’t get lost.

I will host you in my house, a typical 19th century Salento villa in Lecce stone and walls from the Messapian era. Depending on the season, we will be in the living room or in the garden to enjoy the colors and scents of Salento. SINGLE WORKING TABLES AND LARGE SPACES ALLOW THE SPACING IN COMPLIANCE WITH ANTICOVID RULES ANDE DECREES . The experience can be carried out in the morning or evening at request.

We had a great time with Paola, who welcomed us into her beautiful home like friends. After learning the secrets to making orecchiette, macaroni and cavatelli, Paola prepared an aperitivo for us in her garden and showed us how to make two simple but very tasty recipes for pasta sauces, using local ingredients and fresh produce from her own garden. If you’re wondering if you should do this activity, stop thinking and just try it! I had a feeling when I read Paola’s words in the description that I wanted to meet her, so we travelled from where we are staying in Bari by train just for this experience. It was beyond worth it. Paola is a glowing angel! She has so much warmth, joy, intelligence, skill, and knowledge to share. I learned about how to make pasta and about Lecce and history for sure, but we also discussed philosophy and our lives, it was a truly beautiful and soulful connection. And so much fun and the coffee, wine and pasta were delicious! I recommend Paola wholeheartedly :)

Cooking pasta together with Paola was a really wonderful experience. She welcomed us at her house in Lecce that is a really special place. With a lot of calm and passion for cooking, local food and the history of food she explained us how to to do different local pasta shapes. Afterwards she showed us some simple ways of preparing the pasta and we shared a delicious meal in the garden chatting and enjoying the food. We've learned a lot and spent a wonderful time.
