In this hands on class we will learn to bake and decorate healthy, vegan and delicious cookies and cakes based on modern Moroccan recipes. -We will start off by making chocolate from scratch -Almond, coconut and tahini medallions that are spiced with sweet traditional spices -Moroccan Jewels: chocolate balls made with nuts, dried fruit and seeds -Flourless chocolate cake, filled with Halva and topped with our homemade chocolates. At the beginning of the class I will introduce myself and background, I will also offer you the opportunity to introduce yourself. I will review the recipes that we will be using, along with the benefits of certain ingredients (almond flour, cocoa, etc) We will start by making the homemade chocolate from scratch, which we will be using throughout our recipes. We will then bake the cookies and chocolate cake. while they are in the oven, we will continue to review health benefits and then move on to prepare non-baked treats (my chocolate jewels!) And of course, there will be wine and treats to enjoy throughout class. You will leave the class with a box of your own treats, and a recipe guide to recreate the desserts to your liking! My name is Aliza and I am the founder of Manna Lanu, a holistic food concept. I grew up in Jerusalem, Israel, in a large Moroccan family. Cooking was essential for my family’s bonding, vitality, and traditions. My grandfather was a spice dealer, and taught me the healing properties of spices, so I use abundantly in my cooking. My focus is French-Moroccan/ Berber, influenced by what is is available fresh from local markets. My cooking and baking is fresh, colorful and festive, made with lots of imagination and love. This experience will take place in my brownstone in Brooklyn. It is a renovated house with exposed brick and is adorned with Moroccan decorations. My large kitchen and island are great for learning to bake.
