Let's bake some Portuguese bread together!

I will pick you up at our meeting point in downtown Lisbon and drive an hour away through the countryside to a hilltop in the Serra de Montejunto. A protected landscape with mountain views and vineyards, a real hidden gem that even most people from Lisbon don't know about.

When we arrive, we enter the restored windmill and meet Miguel, the traditional millwright, and carpenter who recreated the original structure according to Portuguese tradition.

We'll learn how the mill functions, and weather permitting, grind heirloom wheat, or corn.

Miguel's nephew Carlos is our expert baker who will teach us how to turn this exceptional flour into bread, following old family recipes. We'll mix and knead the dough, and after the dough has risen, we'll form loaves, slash them and bake them in a wood-fired brick oven.

We will serve lunch in a charming inn, with views out over the valley dotted with fields and vineyards. Here a local family shares their recipes for traditional Portuguese cuisine.

The centerpiece of our meal is cozido, one of Portugal's national dishes. A unique deep-dish pie with a yeasted crust, filled with a variety of sausages, beef, pork, and vegetables, baked in the wood-burning oven.

Finally, we bid farewell to our hosts Miguel and Carlos, and return to Lisbon, each with a loaf of home made bread as a souvenir.

Besides i'm from Lisbon, i'm in love by the Portuguese West Region and its gastronomy, wine, beautifull scenery and rural traditions.

From more than 12 years that i live in this region, i'm an environmental engineer, working in water treatment and renewable energies.

In parallel of the engineering , in 2017 i opened a tourism company and definitly discovered my passion of sharing the traditions and knowledge about my country and this specific region.

For years that i study the traditions, wines and gastronomy of the west region, i'm very passionate by food and wine and the "science" of pairing both.

My patners are Miguel a traditional millwright carpenter and miller and his nephew Carlos, a young master baker very connected with the ancient traditions of the region.

As a first time visitor of Portugal, I was looking for a way to get out of the city and see something special and unique to the local culture and area. I booked this experience with João, and am so very glad that I did. He was in great communication with me every step of the way. The day of the experience, he went out of his way to make it a special day for me. Being a solo traveler it was lovely to meet and converse with someone who is passionate about his region. And to share his friends and colleagues at the windmill and bakery with me-the entire learning and hands on experience was something I will never forget. Miguel and Carlos were gems-how lucky for their community that they both are following their passions and making this experience available to both their local community and the world community through working with João. I travel a lot, and this was by far one of my favorite day trips/experiences in my many years of travel.

This was an exceptional tour for our entire group of friends and I would definitely highly recommend it. This is not something you could easily do it on your own. Joao was a very friendly Guide and told us many stories along the route. We got to see two windmills and we were able to get a tour of one of them which was really amazing. Carlos the baker was very friendly and patient with us explaining how to make bread from scratch. We had a spectacular sunny day (in December!) and it was warm enough we were able to eat outside on the patio… A delicious feast for all! Joao included several excellent stops along the way to the windmills and on the way back and we were able to sample some pastry treats, see some amazing views, and even walk on a spectacular beach. This is the kind of experience I always dreamed of having when traveling. Meeting new people and hearing about their life experience makes a day trip like this far more interesting than just visiting tourist sites.

Mais que um passeio...esse programa é uma vivência, não só da técnica de moer o trigo e fazer o pão mas de contato com a genuína cultura portuguesa. João é um guia perfeito, muito simpático, conta boas estórias e enriquece o passeio com seu bom humor. Miguel é o dono do moinho, explicou todos os detalhes da restauração e do funcionamento. Cada um do grupo fez um pão, que ficou crescendo durante nosso almoço (um delicioso cozido português ) e que depois foi assado em forno a lenha. Recomendo muito, um programa diferente mas inesquecível.

This is a marvellous and amazing experience. The Avis Windmill is very lovely against the beautiful backdrop of the Montejunto. Miguel is so passionate about his windmill and gave us a very interesting and informative tour with all the working details of it. I would say he's an artist with his beautiful work shown in both the windmill and the donkey house! Carlos is also very nice and gave us big tips on bread making. His restaurant and food are simply magnificent! Joao has done a very impressive job in designing this experience and we have a very memorable day.

This experience was one of my highlights during our trip to Lisbon! From start to finish, my husband and I had a wonderful time with João. He was extremely friendly and knowledgeable, and we felt extremely comfortable with him- as if we were talking to a friend. The bread-baking experience itself was wonderful- from the views, to learning about the history of the windmills, to the actual bread-baking activity, and then finally lunch. But the bakers (Carlos and Miguel) we worked with are just masters of their craft, and we feel extremely lucky to have been able to parktake in the experience with them. I just wish the bread-baking part was longer somehow! Lunch was also delicious! You can never go wrong with good food, good wine, and great company. Overall, I would definitely recommend this experience to everyone! It makes a great day trip from Lisbon, and you can see the real Portugal :)

I cannot say enough about how amazing this experience is and how thankful I am that I was able to experience a day in Lisbon this way! This definitely is not something you would stumble upon or do on your own and to hear from locals about their passions for the history and culture of the different parts of Portugal is really special. If this was the only thing I did in Portugal I would be very pleased with my trip :-) I cant imagine there are many people more friendly and accommodating than Joao!
