We'll start with an introduction to homebrewing and an overview of the malt extract method, which is an easy way to get started with brewing . After that we'll dive right into making a 5-gallon batch of ale using malt extract, water, hops and yeast. While we're brewing we'll cover topics like recipe development, the different types of grains, yeast and hops and where to buy them, and the importance of equipment sanitation. Lately we have been experimenting with adding foraged ingredients, so we will also use an unusual seasonal ingredient like tree bark, maple sap or wild plant. While the wort is boiling and then cooling we'll take break and sample some of our beers, along with homemade sourdough bread and jam made from our berries. Following that we'll give a hands-on demonstration on how to carbonate and bottle beer once fermentation is complete. We don't like spending a lot of money on expensive brewing gear, so throughout the day we'll share some DIY tips on keeping equipment costs to a minimum. At the end of the workshop each person will go home with a bottle of our homebrew, general directions and tips for brewing, and a recipe for the beer we brew at the class.
Bill and I have been learning self-sufficiency skills together for three decades. We brew our own beer, cider and kombucha, grow organic fruits and vegetables, bake sourdough bread and make jam and pickles. We've been brewing beer together since 1990 and have made hundreds of batches since then. We make a variety of ale styles including pale ale, stout, wheat, rye and red ale. We grow our own hops to use in our brews. Lately we've been experimenting with foraged ingredients like smoked hickory bark and maple sap. Participants will learn many useful tips from our years of brewing

The homebrewing workshop will take place at the Treehouse, our unique home in the hills of Newfield, south of Ithaca. We built our house ourselves and it is sustainably built, passive solar and filled with natural light. The house number is on the mailbox - please drive slowly up the gravel driveway and park near the house.
