Shiraoi is known as a FOOD INGREDIENTS KINGDOM in Hokkaido.
Though many ingredients are sold to outside of Shiraoi and not easy to get the local ingredients without good local connections.
With our connections, we are able to get a lot of local ingredients and creating international fusion dishes every day also sharing these on SNS community.
You may also enjoy coordinating the dishes with the Japanese unique pottery.

I have 3 year cooking experiences at Japanese restaurants in Japan as well as 2 year dining management experiences at an international restaurant in the USA. Now running a local dinner cooking community sharing recipes and ingredients everyday.
We also work for town official and have good connections with the local farmers, fisherman and small marches which enable us to get incredibly good ingredients that you may not buy at regular grocery stores.
We can also arrange to your dietary if any requests such as Vegetarian, Vegan and so on since I had several years of vegan experiences.

First stop at Kumagai, the local specialized store in Shiraoi town.
The host knows the owner of the store and we can get the recommendations of the day directly from him.
This place is more like market atmosphere especially for fish sections.
If time allows, we can visit the local marche (except Thursday) to get fresh vegetables of the day.

One wonderful and special part was the ingredients gathering- I really experienced how Unique and special Hokkaido ingredients are.

A wonderful experience. Keisuke picked us up from train station, then took us to a lovely nearby cafe for a light lunch. Then we drove to a forested area where we filled up containers with pure stream water. Then we went to a nearby farm to buy shiitake mushrooms. Then to other places to but more ingredients for cooking class. Then we went to his guest house to meet his lovely wife Olga who had set everything up. We spent rest of time learning how to prepare a number of Japanese dishes. Excellent standard of teaching and the final meal was delicious. We had a fun time and the hosts were very hospitable. Could highly recommend this experience.

The cooking class far exceeded my expectations. Keisuke and Olga are absolutely wonderful making you feel right at home. Keisuke is so well connected that everyone knew him around town. He takes you directly to the source for the items for cooking. The recipes were absolutely delicious and fun to make. This was unlike any cooking class I have attended before.

Our cooking class with Keisuke & Olga was a great chance to learn some homestyle Japanese dishes, but we agreed that our favourite part of the experience was collecting the ingredients, exploring the local area, and enjoying a great meal with the lovely hosts. We met some charming and friendly locals, and were introduced to lots of natural sights and artisan stores. Highly recommend for both the great food and great company.
