The Masterclass takes place in my kitchen at Aktienmühle where we can have a coffee or tea and introduce ourselves.
There, I will teach you the secrets of Greek Phyllo. You will be able to involve in making a Greek Pie from scratch.
Under my instructions, you will make the dough and I will show you how to spread the phyllo sheets, thin, silky and transparent.
Then we will proceed with baking and tasting. We will talk about the importance of pies in Greek tradition, how this dish started and how it connects the past and the future.
In conclusion we will enjoy some good wine and taste the fruits of our work. At this point we will proceed to Q&A.

I am Christos Karantais, a Greek expat in Basel, Switzerland, originally from Thessaloniki. I am a cook, singer, and food and wine enthusiast. I currently run a small business in Switzerland, making and selling authentic Greek Pies.

I consider Greek pies and especially Spanakopita (a rich spinach and feta cheese pie) my favourite snack since I was a child. When my grandmother and my great aunt made them, it was a reason to celebrate. The two women used to roll up their sleeves and while chatting, laughing and singing they would spread many layers of phyllo pastry, enough to build two big pies. I remember the aluminium tins with the multilayered delicacy covered in olive oil, waiting to be put in the oven.
It has always been a great treat for the family and visitors, who would enjoy it as a breakfast, main dish or snack.
