Our unique course takes place around a huge farmhouse-style table in the centre of our family-run showroom surrounded by live wood fired stoves that we cook on.
You will be welcomed by passionate jam maker Carol and a specialist artisan baker Miranda.
This is a hands on course.
You will be welcomed with tea or coffee and a potted history of the 60 year old family business, an introduction to traditional jam making, flour grinding and artisan bread.
You will make Carol’s signature Hedgerow jelly, her famous Lemon and Bramley apple curd and Somerset Cider Apple Chutney using Burrow Hill Cider from down the road.
When the jam pans are on, you will roll your first batch of bread. You will learn simple and traditional techniques for rolling and folding artisan breads.
While the breads prove you will make pastry for a sweet tart to use your jam in.
While the bread is baking lunch is served. While everything cools and is labelled, you can pop over for a tour of our beautifully restored pub The Firehouse Somerset (where Carol and Miranda met and ran the pastry section).
You will go away confident we have left no stone unturned in helping you on your lifelong journey of making artisan bread and traditional preserves.

Carol spent most of her childhood in her father’s allotment that he still cares for to this day. Her love for jams and jellies stemmed from her mother, who was handed the fruits of Carol’s fathers labour, to turn into jams, chutney’s and preserves all year round.
Carol has worked as a professional chef in some of Somerset’s most well-known restaurants and tea rooms. She has left a legacy wherever she has worked. She more recently baked up a storm at Hestercombe Gardens, where her beautiful cakes and jams were devoured by the masses. He true passion is foraging, begging, borrowing and cooking any vegetable, fruit or berry that makes its way into her jam pan, and turning it into a seriously good chutney or preserve.

This is a unique location in a family-run business that has been going for more than 50 years. You will bake and make on the wood and oil-fired Esse and Rayburn cookers. This is a warm and buzzing atmosphere with live wood burning stoves. Proving bread on the hearth, bubbling jam on the Esse Ironheart adds to the experience of traditional artisan bread and jam making. A truly rustic experience like no other.
