I will be teaching how to make 3 types of pasta dough (di semolina, flour and semolina:culurgioni and egg) used in the creation of 3 different creative recipes in my home kitchen/workshop. The number and the variety of pasta can be personalized according to preferences. The duration may also vary according to the number of persons attending the experience. First, we will be going to Mercado San Juan (optional), one of the most gourmet markets in Mexico City, simply to enjoy ourselves. Then, we will make all the necesary dough by hand. We will prepare the ingredients for the recipes (cutting, mixing, warming, etc..) and shaping the pasta using many tools such as a manual pasta machine, cutting molds, a flutter cutter and a bicicleta. The last part will be more extensive for making other pasta shapes unrelated to the dishes. To finish up, I'll show you how to nicely plate your fresh hand-made pasta! I will be inviting active participation to fully appreciate the newly discovered characteristics of fresh pasta and to learn new inspiring kitchen skills. I will be sending you the recipes we created by email after the experience along with advices.
