Would you like to learn how to make one of the most emblematic dishes from the Viceroyalty and convents of Mexico? Mexican Cuisine was designated by UNESCO as an Intangible Cultural Heritage of Humanity in 2010 and one of its best exponents is “mole poblano” created in the Convent of Santa Rosa by Sister Andrea de la Asuncion in Puebla State during XVII century to celebrate the visit of our conquerors. More than 25 ingredients are combined to get the mixture of the mole, which make this dish complex and authentic. Spicy and sweet are the main flavors you will find in this dish. In this experience, we will guide you, step by step to learn the traditional techniques such as browning the ingredients in a griddle, or press them on the metate to get the delicious mixture, as our grandmas used to make it and I´ll let you know how to make it in a modern tool to be made at home. In four hours, you will also learn about culture, ingredients, and tools and have a lot of fun. We will welcome you with a shot of mezcal or tequila from Guerrero, then we will have a funny ice breaker to get to know each other. Once we have the mixture, we will cook a traditional white rice with veggies, which match perfectly. Finally, we will serve it as we often do in common parties such as weddings, town celebrations, baptisms,etc...
