You’ll be welcomed into my kitchen and you'll learn the secrets of to make perfect Italian pasta! We'll craft together a salad, 2 kind of pasta and a dessert.

First, we'll make the lemon sorbet that needs to be refrigerated. Than we’ll prepare a delicious Panzanella salad. Then we’ll make orecchiette and cavatelli. This pasta is traditionally from the region of Puglia, in the south of Italy. It is based on a dough made with semolina flour and water (vegan). It has the shape of a small ear (orecchia, in Italian). We'll serve the orecchiette, as they do in Puglia, with broccoli and garlic (anchovies and red pepper are optional).

The key for a great pasta is the consistency of the dough, which I learnt from my grandma back in Italy when I was a teenager. We'll serve the pasta with your choice of Genovese pesto or broccoli.

At the end of the meal you'll have the chance to taste my favorite lemon sorbet recipe!

We will spend the first 2 hours cooking. Then, in the remaining hour, we'll sit down and enjoy the dishes.

The experience is BYOB, feel free to bring your favorite beverage.

My passion our Italian cuisine started when I was a kid. I would spend hours observing my grandma and mom cooking and baking. At the age of 8, I made my first tiramisu all by myself. Then, at 18, I fell in love with vegetarian cuisine. In 2013, I left my hometown, a small city located in the north of Italy, and relocated to Philly. I started teaching cooking classes about 2 years ago. It was a dream come true. I am finally able to cook full time, create new recipes and give old ones my personal touch. I work with all types and levels of students, from the novice to the high skilled cook. I’ve taught teenagers and adults. I can teach the class in Italian, English or Spanish. Back in Italy, I worked in crowded bars and fine restaurants. My passion for good food and wine has always been there.

방문 장소

The class will be held in my recently built house. I am located in Downtown Philadelphia, about 1 mile away from Rittenhouse Square. My place has a spacious kitchen and tables to seat my guests.
We will meet at my house which is easily reachable via public transportation and ride-hailing apps.

Fede made us feel welcome and ‘at home’ immediately. The activities were planned out well so all participants could be active if they wanted to do so. The menu was well planned and all ingredients were delicious and fresh. Menu options were provided for those who didn’t care for certain foods or those with dietary restrictions. Fede shared not only his culinary prowess but also his personal perspective about what we were creating and enjoying. The environment in his home was comfortable and we felt like friends eating at his table. We would definitely book with Fede again.

Fabulous interaction with Italian cooking, very hands on, practical and delicious. Friendly and knowledgeable host. I will be looking for more classes on my next visit to Philadelphia.
