When you arrive at our farmhouse, you will each be given the ingredients you need to make the pasta dough from scratch. I will teach the class how to make the dough, demonstrating with my own ingredients so you can visually learn the method. While we are kneeding the dough I will talk through the history of fettuccine pasta and the carbonara Then we let the dough rest. While it is resting, we will start to prepare the other ingredients for the carbonara. Then we will start rolling out the rested pasta dough into long sheets, each guest will be able to do this themselves and I have two pasta machines the class can use for this. We will then let the strips of fettuccine pasta hang to dry. I will also show guests how best to cook the carbonara using our delicious duck egg yolks as a key ingrediant. Lunch will be served at around 1:30pm. I will be on hand should you need anything but will leave the kitchen so guests can enjoy their lunch together. After lunch, we will package the pasta, so each guest takes home their own home-made fettuccine along with a half-dozen box of duck eggs.

My names Brett Griffin, farmer, entrepreneur and passionate cook. Over the years I have perfected one of my all-time favourite Italian dishes - the Carbonara. I've learnt how to make fettuccine from scratch with the assistance of a pasta machine. I've also perfected the Carbonara recipe using the all-important ingredient - fresh duck eggs - which is something we have plenty of on the farm. Growing up in Australia, my Mum would always cook meals from scratch, and I'd be her assistant. Cooking continues to be a big part of my everyday life - I spend around 2 hours in the kitchen each day. I'm always researching new recipes and experimenting with new flavours. Cooking is a hobby and skill that I love to share with others, as I believe food is an important aspect of our health, society and culture.
