This is a hands-on experience that starts with an introduction about Hawaiian plants and fruit trees and a tour of the sanctuary grounds. Once everyone gets acquainted with one another, we will harvest from our garden and head to the pool-side, open air kitchen to prepare the food we've gathered. We have a 3 mile coastline view from the kitchen area, and you can cool off with your feet in the pool. Dinner classes include Kona's breathtaking sunsets at no extra cost!
Each experience will focus on a different type of cuisine, (Italian, Thai, Indian, Mexican, etc.) but each will consist of a type of salad, a main course (usually involving a starch, i.e. grain, pasta, bread, etc.), and a light dessert. We will, of course, be using as many vegetables as possible, and plenty of fruit as well, with as much locally grown produce as we have at any given time of year. As we prepare the food, there will be instructions and lessons on knife handling, small appliance use, how best to cut ingredients, what parts of fruits and vegetables to use, and what to compost. For those interested, it is perfectly fine to bring your own bottle of wine/beer.
You will leave with new cooking skills, a full belly, and likely a few new friends. Voila!!

Banyan Tree Sanctuary Guest House has six guest accommodations if you would like to stay with us, or you are welcome to come to the vegan cooking class independently. This is an open air kitchen so bring bug spray and wear long pants if you are susceptible to being bitten.

I've been a vegetarian for over 23 years & a vegan for over 15. I was taught how to cook by spending time in the kitchen with my mother & grandmother, who was a chef at the Waldorf-Astoria in NYC. I bring to the table my love of great cuisine and working with fruits & vegetables that we grow on our sanctuary grounds. You will likely be working with ingredients that you have never tasted before, or at the very least, ripe! My passion for the safety of animals led me on this path, & I have discovered that not only can you thrive on a vegan diet, but you can literally change the world with the food choices you make. Eating with compassion means helping the environment, all animals; domestic & wild, & humanity.

Initial walkthrough of the property was engaging and informative but did not enjoy the cooking class. We helped prepare the fruits and veggies but did not participate or hear anything about the actual cooking of the main courses so did not learn anything about how to cook vegan meals. The taste of the food was also underwhelming and I am a vegetarian.

The vegan cooking experience was amazing. I loved the setting in the mountains above Kona. We strolled around the large grounds of Rae's property as he introduced us to native plants, fruits, and vegetables, and we harvested many different types for our meal. In the outdoor kitchen, Rae enlisted all the guests' help in cleaning, chopping, and cooking. We ate two excellent salads, two grain and vegetable main courses, and several fruit based desserts. Everything was wonderful. My husband and I are not vegan, but we thoroughly enjoyed this delicious new way of eating. Thanks for a great afternoon!
